Blue Cheese Update
January 28, 2011
I have never made a blue cheese on my own before. I have visited different dairy farms and helped experienced cheesemakers before, but nothing by myself.
These shots are taken at about 3 weeks. From what I have read, this looks about right. Blue mold sprouted after about 10 days, and I should see some brown or brown/orange streaks after about a month. At that point I will scrape the exterior every few days to create a smooth and even rind, and then wrap in foil after 90 days to complete the aging.
Like I said, this is my first one so I am not sure if I am exactly on track…but at least it’s blue…
