Cheese Abuse

I wanted to post this picture to make everyone aware of how important it is that you buy your cheese from a reputable shop that allows you to taste, and cuts to order from their stock.  This piece here was bought from a reputable place that prides itself in having a diverse and extensive cheese counter.  As you can tell, this piece was wrapped in plastic for far too long, and stored at an inconsistent temperature.  Look at the light-colored area where the label was, as opposed to the darker area where the rind is eating away at the paste.  Pay attention to where you get your cheese.  Buy from a shop that cuts to order or allows you to taste at the bare minimum.  There is a reason cheese shops cut cheese to order and wrap it in paper with a wax film.  Cheese is alive!  It needs to breathe. As you can see from this picture, this piece is dead…

    Aaron, please tell us what store you got this from. Not to shame them, but to know and hopefully get that shop to pay better attention to their stock.

    This cheese was bought at Adam’s Fairacre Farms up in Poughkeepsie, NY. I was very surprised as they seem to take great care and pride in their counter. I agree with you. As a follow up, I had planned on writing them a letter to point this out.

    Great tip! How frustrating is it to get some really awesome, rare and EXPENSIVE cheese only to find out it died before its time from smothering.
