Cheese Course at Mt. Mansfield Creamery

In the next couple of weeks, I am driving up to Vermont for a weekend cheese making class at Mt. Mansfield Creamery! Over the couple of days that I am there, Peter Dixon will be conducting classes and seminars to include topics such as  starting your own creamery, milk properties of goat and cow milk and their use in cheese making, cheese brining and aging, etc…

Peter Dixon is a renowned artisan cheese maker who has had a hand in quite a few of the successful dairy and cheese farms in the Northeast.  I heard and read his name a number of times before coming across this class, so needless to say, I am pretty excited…

I am sure that several posts will stem from this class, so you will certainly hear more about this next month!
